Iberian Paleta (Shoulder) - (Paleta de Cerdo Iberico) Made from the front leg and shoulder of Iberian pigs and subject to a salting and subsequent drying process in a natural environment. No smoking process is involved, just salt and pure mountain air for 24 months. This product is low in calories and exceptionally high in proteins, and is good for cholesterol control. There are two typesaccording to quality: Iberian acorn fed paleta: Made from pigs bred and fattened exclusively on acorns and pastures. Iberian recebo paleta: Made from pigs bred and fattened on a mixture of acorns and fodder.
