White crystal or crystal powders,and sweets first and then hot,no chemical changes in the air.Atmospherically sublimation temperature over 76oC.Easily to decarboxylate and change into phenol and dioxide when heated atmospherically,and its aqueous solution appears acid reaction,becomes purple with FeCL3.Slightly dissolves in water but dissolves in boiling water easily.Dissolves in the ethanol or ether and slightly soluble in chloroform.
It is a salt derived from benzoic acid and is used as a preservative in foods and cosmetics. Sodium benzoate and water produce benzoic acid, which is the active form of the preservative. Sodium benzoate has been used in a wide variety of products because of its antimicrobial and flavor characteristics.

It is not hydrophilic, so easy to penetrate the cell membrane into the cell body, disturbance of cell membrane permeability of cell membrane, inhibit absorption of amino acids.
