The Cecina is a Spanish meat cured, similar to ham but made bycuring beef.Also available with halal certificate.
The Cecina de Leon IGP comes from the hindquarters of cattleincreased
(over 5 years). From the rear leg of the cow cut up the fourpieces or cuts that
are going to get the Cecina de León. The parts obtained arecalled: Contra cover,
Stifle and Hip.
-Contra: is formed by the contra itself, and the round, whichadopts a triangular
prism shape something cylindrical. The round consistsexclusively of the
semitendinosus, and the muscle against gluteobíceps. The minimumweight is 10 kg.
- Babilla (Stifle): ovoid piece composed of the componentssquared thigh muscle
(thigh rectus and vastus lateralis, intermediate and medial).The minimum weight is
7 kg. Hip: triangular, comprising the gluteus medius muscle,accessory and deep,
and the calf muscles of the hip. The minimum weight is 6 kg.
- Cadera (Hip): triangular shape, comprising the gluteus mediusmuscle, accessory
and deep, as well as the calf muscles of the hip. Minimum weight6 Kg.
- Tapa (Cover): fleshy mass conical, although half is flatlaterally. It comprises medial
thigh muscles. Specifically for the sartorius, pectineus,gracilis, adductor, semimenbranoso
square thigh and pelvic muscle extra serving external shutter.The
minimum weight is 8 kg.
