Gold in color. A well balanced wine with flavors of honey, vanillaand tangerine.The grapes were picked in early January 2008 when thetemperature dropped below -10C. The frozen Vidal grapes werewhole cluster pressed with a wooden basket press and the precioussyrupy juice was collected at 36.5 Brix. The juice wasgravity fed into a stainless steel tank where it settled for 11days, racked, the clean juice warmed and inoculated withyeast. A cool fermentation at 15C followed. After thecompletion of fermentation, untoasted oak chips were added toincrease mouth feel and roundness. The wine was stabilized,racked and filtered before bottling in June 2008.
