Matsutake
Matsutake (in Chinese ''Song rong'') is thecommon name for a highlysought-after mycorrhizal mushroom thatgrows in Asia, Europe, and North America. It isprized by the Japanese and Chinese for its distinctspicy-aromaticodor.
Matsutake grow under trees and are usually concealed under fallenleaves and duff on the forest floor.
Itforms asymbiotic relationship with the roots of alimited number of tree species. Matsutake are known to growin China, Japan, Korea, Canada, Finland,the United States, Sweden, among othercountries.
In Japan it is mostcommonly associated withJapanese Red Pine.
Though simple to harvest, Matsutake are hard to find, causing the price to be veryhigh.
Domestic productionof matsutake in Japan has been sharply reduced over the last 50years due to a pine nematode Bursaphelenchusxylophilus,and it has influenced the price a great deal.
The annual harvestof matsutake in Japan is now less than 1, 000 tons, and theJapanese mushroom supply is largely made up by importsfrom China, Korea, the North American PacificNorthwest (Northern California, Oregon, Washington,and British Columbia), and NorthernEurope (Sweden and Finland).
The price formatsutake in the Japanese market is highly dependent on quality,availability, andorigin.
The Japanesematsutake at the beginning of the season, which is the highestgrade, can go up to $2, 000 per kilogram.
