All chocolates are produced with freshness ingredients possible with very little or no mechanized equipment.
Our Chocolatiers use ganache, cream, high quality chocolate couverture, and pure fruit juice, real liquor, freshly brewed expresso and tea flavour. This offers tremendous freedom in using any flavour combinations, ingredients, or decorating techniques.
At Schokolade we strive to use 70% couverture in our creations (couverture is the term used for high quality chocolate used for dipping and enrobing, containing a minimum of 56% cocoa content. ) The percentage number refers to the amount of cocoa bean used in the couverture. Thus our 70% dark contains 70% of the natural goodness and flavor of the cocoa bean.
